Shortbread Dandelion Cookies Recipe

  • 2/3 Cup Sugar
  • 1 1/4 Cups Flour
  • 1 Stick Butter room temp
  • 3/4 Cup Loosely Packed Dandelion Petals
  • 1 Tbsp Vanilla Extract
  • Course Sugar or Sprinkles optional

Method
 

  1. Prepare petals.
  2. Mix sugar, butter, and vanilla until mixed.
  3. Slowly add flour and mix well until crumbly.
  4. Mix in flower petals by hand.
  5. Place dough on plastic wrap.
  6. Shape into a log, wrap, and roll.
  7. Refrigerate for at least 3 hours (or overnight).
  8. Preheat oven to 325 F.
  9. Unwrap and slice into 1/4 inch thick slices.
  10. Place slices on a nonstick cookie sheet.
  11. Bake for 30 minutes. Sprinkle with sugar (optional).
  12. Cool on a rack and store in an airtight container.

Notes

Be sure to use dandelions that have not been treated with pesticides.
