- Rinse and dry dandelion greens, trim tough stems.
- Peel and thinly slice garlic cloves.
- Heat olive oil in a large pan over medium heat.
- Add garlic and red pepper flakes, stir until fragrant (1-2 minutes).
- Add dandelion greens to the pan, toss to coat.
- Sauté until wilted and tender (3-5 minutes), add water if needed.
- Season with salt and pepper.
- Remove from heat, squeeze lemon juice over greens, and toss.
- Serve immediately.
Notes
Dandelion greens can be slightly bitter, so adjust the lemon juice to your taste. For a milder flavor, blanch the greens in boiling water for a minute before sautéing.
