Method
 

  1. Rinse and dry dandelion greens, trim tough stems.
  2. Peel and thinly slice garlic cloves.
  3. Heat olive oil in a large pan over medium heat.
  4. Add garlic and red pepper flakes, stir until fragrant (1-2 minutes).
  5. Add dandelion greens to the pan, toss to coat.
  6. Sauté until wilted and tender (3-5 minutes), add water if needed.
  7. Season with salt and pepper.
  8. Remove from heat, squeeze lemon juice over greens, and toss.
  9. Serve immediately.

Notes

Dandelion greens can be slightly bitter, so adjust the lemon juice to your taste. For a milder flavor, blanch the greens in boiling water for a minute before sautéing.
