  • 1 pound dandelion greens
  • 2 Tablespoons extra-virgin olive oil
  • 3-4 cloves garlic cloves thinly sliced
  • 0.5 teaspoon red hot pepper flakes optional
  • 1 teaspoon sea salt
  • 0.5 Juice from half a lemon

Method
 

  1. Prep the dandelion greens: Trim stems and cut into 3 inch sections.
  2. Wash the greens: Thoroughly wash in cold water and drain.
  3. Boil water in a saucepan: Cook greens in boiling salted water for 8-10 minutes.
  4. Drain: Drain well and squeeze out excess water.
  5. Heat oil: Heat olive oil in a sauté pan over medium heat.
  6. Add in garlic: Add garlic and red pepper flakes (if using). Don't let garlic brown.
  7. Add in the dandelion greens: Toss greens in the olive oil.
  8. Cook until tender: Cook until tender (approximately 5 minutes).
  9. Serve: Transfer to a plate, season with salt, and drizzle with lemon juice (optional).

Notes

Dandelion greens can be bitter, so boiling them helps to reduce the bitterness. Adjust the cooking time to your preferred tenderness.
