Method
- Pluck and rinse dandelion petals.
- Simmer petals in water for 15 minutes.
- Strain liquid and discard petals.
- Add lemon juice and sugar, dissolve.
- Add pectin, boil hard for 1-2 minutes, add butter if desired.
- Test jelly set on a cold plate.
- Ladle into sterilized jars, seal, and cool.
Notes
Ensure dandelions are harvested from areas free of pesticides and herbicides.
