Method
- Gather dandelion flowers, picking only the yellow petals and removing green parts.
- Rinse the dandelion petals gently.
- Place petals and water in a saucepan, bring to a boil, then simmer for 30 minutes.
- Let the mixture steep for several hours or overnight.
- Strain the mixture, pressing down on the petals to extract liquid. Discard petals.
- Pour strained liquid back into the saucepan. Add sugar and lemon slices (if using).
- Bring to a boil, stirring until sugar is dissolved.
- Reduce heat and simmer for 1-2 hours, until thickened. Stir occasionally.
- Remove from heat and let cool slightly. Remove lemon slices.
- Pour syrup into sterilized jars or bottles. Seal tightly.
- Store in the refrigerator.
Notes
Be sure to gather dandelions from areas that have not been treated with pesticides or herbicides.
