- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and cook until fragrant (about 30 seconds). Be careful not to burn the garlic.
- Add the chopped dandelion greens to the skillet. They will seem like a lot, but they will wilt down.
- Pour in the chicken broth (or vegetable broth).
- Season with salt, pepper, and red pepper flakes (if using).
- Cover the skillet and cook for 5-7 minutes, or until the greens are tender.
- Remove from heat and serve hot. Squeeze lemon wedges over the greens before serving, if desired.
Notes
Dandelion greens can be slightly bitter, so adjust seasoning to your preference. Blanching the greens before cooking can help reduce bitterness.
