  • 60-70 Dandelion flower tops Leave 1/4" of the stem as a handle. Harvest only from a non-chemically treated area.
  • 3 eggs preferably organic and free-range
  • 0.25 cup unsweetened applesauce
  • 1 cup organic milk
  • coconut milk optional
  • almond milk optional
  • 0.5 tsp sea salt
  • 0.5 c whole wheat flour
  • 0.5 c fine organic ground cornmeal
  • 1 c Brown Rice flour or your favorite GF mix
  • Virgin Coconut oil
  • oil enough for 1/8-1/4" in your hot cast iron skillet.
  • fresh chives optional

Method
 

  1. Gather Dandelion tops in the morning. Rinse and pat dry.
  2. Heat cast iron skillet and melt coconut oil for frying.
  3. Combine egg, milk, and flour in a bowl and mix to remove lumps. Add optional sweeteners or herbs.
  4. Prepare a skillet on the stove with coconut oil over medium heat.
  5. Twirl the flower into the batter until covered.
  6. Place it into the skillet, petals down, and brown each side. Keep fritters warm in the oven.
  7. Serve hot, drizzled with maple syrup or raw honey.

Notes

Use fresh, young dandelion greens for the best flavor.
